Research over the past few years has shown that Red Cabbage itself lowers LDL cholesterol aka "Bad Cholesterol."
To test this theory, the researchers used 60 mice that had diet-induced obesity and randomized them to one of six feeding groups for 8 weeks:
A low-fat diet
A high-fat diet
A low-fat diet supplemented with red cabbage microgreens
A high-fat diet supplemented with red cabbage microgreens
A low-fat diet supplemented with mature red cabbage
A high-fat diet supplemented with mature red cabbage
The researchers found that supplementation with either red cabbage microgreens or mature red cabbage reduced weight gain induced by a high-fat diet, and the vegetables also lowered LDL cholesterol levels in the liver. However, the red cabbage microgreens were found to contain higher levels of polyphenols and glucosinolates – compounds that can lower cholesterol – than mature cabbage, and mice fed the tiny vegetables alongside a high-fat diet showed much lower circulating levels of LDL cholesterol.
Red Cabbage Microgreens were also found to lower levels of triglycerides – a type of fat that can increase the risk of heart disease (1) – in the liver.
Ulcers and Gastrointestinal Issues:
Vitamin "U" although not specifically recognized as a vitamin, is very abundant in Red Cabbage Microgreens. In the 1950's researchers used mature Red Cabbage Juice to treat Peptic Ulcers. Healing times with conventional treatments were taking upwards of 37 days in some cases, however the Red Cabbage Juice was able to reduce that healing time to just 10 days in most cases.
The same idea was applied in the treatment of Gastric Ulcers which had an average healing time of 42 days with conventional treatment. Patients treated with Red Cabbage Juice reduced their healing time to average just 7 days. Studies are showing that Microgreens such as Broccoli and Red Cabbage can contain up to 40X more nutritional content than their mature counterpart's. Now research hasn't been conducted specifically on this, however it would be fair to say that Red Cabbage Microgreens should have a similar if not better outcome when dealing with Ulcers.
